A well-established restaurant group in Dubai is looking for a PIC Food Technologistproffessional to manage food safety, quality assurance, hygiene compliance, and operational standards across multiple food outlets. The ideal candidate must hold a valid PIC Certification and possess strong knowledge of Dubai Municipality food safety regulations, HACCP systems, and restaurant quality management practices.
The successful candidate will be responsible for implementing and monitoring food safety programs, ensuring compliance with UAE food regulations, conducting inspections and audits, and promoting a strong food safety culture throughout all operations.
Key Responsibilities
Food Safety & Regulatory Compliance
- Ensure full compliance with Dubai Municipality regulations, UAE Food Code, HACCP standards, and company food safety policies.
- Monitor food preparation, cooking, cooling, storage, packaging, and dispatch procedures to ensure safe food handling practices.
- Conduct regular hygiene inspections and internal food safety audits across kitchens, storage areas, receiving sections, and food production zones.
- Implement and maintain food safety management systems, SOPs, sanitation programs, and quality control procedures.
- Ensure all operational processes comply with food safety, hygiene, and quality assurance standards.
Quality Assurance & Operational Monitoring
- Inspect raw materials, packaging materials, food production processes, and finished products to ensure compliance with quality specifications.
- Monitor receiving procedures, supplier compliance, and product storage conditions.
- Verify cold chain management, temperature monitoring records, shelf-life controls, and FIFO/FEFO practices.
- Ensure proper labeling, traceability, allergen control, and contamination prevention measures are followed.
- Maintain accurate documentation including temperature logs, cleaning records, inspection reports, corrective action reports, and HACCP monitoring records.
Audits, Reporting & Corrective Actions
- Conduct routine operational audits and identify non-conformities or food safety risks.
- Prepare detailed audit findings, inspection reports, and corrective action plans for management review.
- Investigate food safety incidents, hygiene violations, customer complaints, and product quality issues.
- Follow up on corrective and preventive actions (CAPA) to ensure effective resolution and continuous improvement.
- Support management during Dubai Municipality inspections and external food safety audits.
Staff Training & Food Safety Awareness
- Conduct food safety, hygiene, HACCP, and sanitation training programs for food handlers and operational staff.
- Train newly recruited employees on food safety policies, SOPs, personal hygiene requirements, and safe food handling procedures.
- Promote awareness of hygiene standards and encourage a strong food safety culture across all departments.
- Guide staff on proper cleaning, sanitization, waste handling, and cross-contamination prevention practices.
Supplier & Inventory Control
- Ensure all incoming food products and raw materials meet approved quality and food safety standards.
- Coordinate with suppliers and procurement teams to maintain compliance with approved specifications.
- Monitor inventory rotation systems, storage temperatures, and product handling procedures to minimize food safety risks and wastage.
Required Qualifications
- Bachelor’s Degree in Food Technology, Food Science, Microbiology, Nutrition, or a related field.
- Valid PIC Certification is mandatory.
- Minimum 3 years of experience in food safety, quality assurance, or food technology roles within the restaurant, hospitality, catering, or food manufacturing industry.
- Strong knowledge of HACCP, GMP, Dubai Municipality food safety regulations, and UAE food compliance standards.
- Experience conducting hygiene inspections, food safety audits, and employee training sessions.
- Excellent reporting, communication, documentation, and organizational skills.
- Strong analytical thinking, problem-solving ability, and attention to detail.
