A prestigious luxury hospitality group in Abu Dhabi is looking for an experienced FSQA Specialist to manage food safety compliance, HACCP systems, hygiene standards, and quality assurance programs across its hospitality operations. This role is ideal for professionals with expertise in food safety management systems, hospitality quality assurance, supplier auditing, food hygiene inspections, and regulatory compliance within hotels, catering, restaurants, and luxury food service environments.

Job Responsibilities

Food Safety Management System (FSMS) & HACCP Compliance

  • Support the implementation, maintenance, and continuous improvement of the Food Safety Management System (FSMS) across hospitality properties.
  • Ensure all food operations comply with HACCP standards, food hygiene regulations, and quality assurance procedures.
  • Assist departments in developing food safety policies, SOPs, risk assessments, and HACCP documentation.
  • Monitor compliance with food safety procedures and recommend corrective actions when necessary.
  • Work closely with operational teams to strengthen food safety awareness and compliance standards.

Food Safety Inspections & Internal Audits

  • Conduct routine food hygiene inspections in kitchens, restaurants, banquet halls, food preparation areas, storage facilities, and food transportation units.
  • Perform HACCP internal audits based on approved quality assurance audit schedules.
  • Inspect food handling practices, sanitation procedures, temperature controls, cleaning systems, and pest management programs.
  • Prepare audit reports highlighting non-conformities, compliance gaps, and improvement opportunities.
  • Follow up on corrective and preventive actions to ensure effective implementation.

Supplier Quality Assurance & Vendor Audits

  • Conduct supplier approval audits and vendor evaluations to ensure food products meet quality and food safety requirements.
  • Monitor supplier compliance with HACCP, GMP, and food safety standards.
  • Maintain supplier audit records and support vendor performance improvement initiatives.
  • Verify product traceability and documentation during supplier assessments and food recalls.

Food Safety Training & Employee Awareness

  • Deliver food safety, hygiene, and HACCP training programs for chefs, kitchen staff, food handlers, and hospitality employees.
  • Provide practical coaching to improve sanitation, safe food handling, and contamination prevention practices.
  • Evaluate training effectiveness and maintain accurate training records and attendance logs.
  • Promote a proactive food safety culture across all hospitality departments.

Food Safety Monitoring & Verification Activities

  • Monitor wireless temperature monitoring systems and ensure accurate temperature recording for chilled, frozen, and hot food storage areas.
  • Conduct ATP testing and environmental hygiene monitoring to verify sanitation effectiveness.
  • Review food safety monitoring logs, calibration records, and verification reports.
  • Ensure compliance with cleaning schedules, hygiene protocols, and food storage standards.

Medical Screening & Employee Health Compliance

  • Coordinate with HR teams to ensure timely medical screening and health certification of food handlers.
  • Verify that employee medical records comply with Abu Dhabi food safety and public health regulations.
  • Ensure health-related documentation is properly maintained and updated.
  • Support corrective actions related to food handler health and hygiene compliance.

Incident Investigation & Food Recall Management

  • Investigate food safety incidents, guest complaints, contamination issues, and food quality concerns.
  • Conduct root cause analysis and prepare detailed investigation reports for management review.
  • Coordinate product traceability activities with suppliers during recall or withdrawal situations.
  • Support food recall procedures and corrective action implementation in line with food safety protocols.


HACCP Documentation & Record Management

  • Verify HACCP records, monitoring logs, audit findings, and food safety verification documents.
  • Ensure accurate maintenance of food safety documentation across all assigned hospitality properties.
  • Support digital compliance systems and documentation control processes.
  • Maintain records related to inspections, testing activities, training, and corrective actions.

Quality Assurance Performance Monitoring

  • Monitor hospitality operations against established quality assurance and food safety performance indicators.
  • Analyze audit trends and food safety performance reports to identify improvement opportunities.
  • Support continuous improvement initiatives related to hygiene, food quality, and operational compliance.
  • Assist property HACCP teams in implementing effective corrective and preventive action plans.

Health, Safety & Regulatory Standards

  • Ensure all food safety and quality assurance activities comply with occupational health and safety regulations.
  • Maintain awareness of UAE municipality regulations, HACCP standards, ISO food safety requirements, and hospitality compliance guidelines.
  • Promote a safe, hygienic, and compliant working environment across all food service operations.

Candidate Requirements

  • Bachelor’s Degree in Food Science, Food Technology, Microbiology, Nutrition, Hospitality Management, or related discipline.
  • HACCP Certification, ISO 22000, Food Safety Level 3, or equivalent qualification preferred.
  • Minimum 3+ years of experience in food safety and quality assurance within luxury hospitality, hotels, catering, or food manufacturing sectors.
  • Strong understanding of HACCP, GMP, FSMS, food hygiene standards, and UAE food safety regulations.
  • Experience in food safety audits, inspections, supplier quality management, and incident investigations.
  • Excellent communication, reporting, leadership, and training skills.
  • Proficiency in Microsoft Office and digital food safety monitoring systems.
