Food Cost Controller to join the Catering team in Abu Dhabi. This senior-level role is ideal for a hospitality professional with over 10 years of proven experience in industrial catering, large-scale food operations, or high-volume hospitality environments. The successful candidate will play a critical role in controlling food costs, optimizing inventory, reducing wastage, and improving overall profitability through data-driven cost management strategies.

Key Responsibilities – Food Cost Controller

  • Monitor, analyze, and control food and beverage costs across all operations to ensure alignment with budgeted targets
  • Track daily, weekly, and monthly food consumption and identify cost variances
  • Analyze production yields, portion control, and usage patterns to minimize food waste and losses
  • Food Cost Controller oversee inventory management, including stock counts, reconciliation, expiry monitoring, and valuation
  • Ensure procurement accuracy by verifying purchase orders, supplier invoices, pricing, and delivery quantities
  • Prepare detailed cost variance reports, trend analysis, and performance dashboards for management review
  • Recommend and implement cost optimization strategies without compromising food quality or service standards
  • Work closely with procurement, kitchen, operations, and finance teams to improve cost efficiency
  • Ensure compliance with company policies, internal controls, and hospitality best practices

Qualifications & Experience

  • Minimum 10 years of experience in food cost control, preferably in industrial catering, contract catering, or high-volume hospitality operations
  • Strong background in food cost analysis, inventory control, procurement auditing, and waste reduction
  • Excellent analytical, reporting, and problem-solving skills
  • Proficiency in cost control systems, inventory management software, and MS Excel
  • Solid understanding of catering operations, menu costing, and large-scale food production processes
  • Ability to work independently, meet deadlines, and manage multiple cost centers efficiently.
