Food Technologist (Bakery Industry) to join a leading food manufacturing company in Dubai. The role focuses on bakery product development, quality assurance, customer complaint handling, regulatory compliance, and product improvement activities.

The ideal candidate should have strong expertise in bakery formulations, food safety systems, product specifications, and new product development (NPD), along with hands-on experience in quality control and customer coordination within a food manufacturing environment.

Key Responsibilities

  • Manage and investigate customer complaints related to bakery products, ensuring proper documentation, root cause analysis, and timely resolution.
  • Coordinate with QA and production teams to implement Corrective and Preventive Actions (CAPA) and ensure closure of complaint cases.
  • Conduct product evaluation, tasting, and cutting sessions with QSR customers and internal teams to maintain product consistency and quality standards.
  • Support new product development (NPD) for bakery items including formulation, trials, sample preparation, and final product approval.
  • Work closely with production teams to optimize bakery formulations, shelf life, texture, taste, and appearance.
  • Visit production facilities, warehouses, depots, and customer sites to investigate product quality issues and deviations.
  • Assist in maintaining and updating product specifications, recipes, and technical documentation.
  • Coordinate with regulatory and QA teams for SFDA, municipality (Baladiya), and export product registrations.
  • Review and verify product labels, packaging artworks, and nutritional information developed by lab/regulatory teams.
  • Conduct finished goods specification training for production staff, including bilingual (English/Arabic) training sessions when required.
  • Ensure compliance with HACCP, GMP, GHP, and food safety management systems across bakery production processes.
  • Support internal audits, customer audits, and regulatory inspections.
  • Maintain accurate records of product testing, trials, complaints, and quality reports.
  • Collaborate with supply chain and retail teams for product returns, verification, and quality checks.
  • Continuously work on product improvement, cost optimization, and quality enhancement initiatives.

Required Qualifications

  • Bachelor’s degree in Food Technology, Food Science, Microbiology, Chemistry, or related field.
  • Minimum 2–4 years of experience in a food manufacturing environment, preferably in the bakery industry.
  • Strong understanding of bakery processing, ingredients functionality, and product formulation.
  • Experience in NPD, quality assurance, and food safety systems.
  • Knowledge of HACCP, GMP, GHP, and food regulatory standards.
  • Experience handling customer complaints and product investigations.
  • Familiarity with food labeling, specifications, and regulatory approvals (SFDA preferred).
  • Strong analytical, communication, and coordination skills.
  • Ability to work in a fast-paced production environment and handle multiple projects.
  • Arabic language skills are an added advantage.
