Food Technologist or Food Scientist in Dubai, UAE, who is responsible for the research, development, and validation of dehydrated, instant, and emergency food products for defence and disaster-relief operations. The role focuses on rapid-rehydration meals, survival rations, and shelf-stable foods designed for extreme environments such as high altitude, cold weather, and field conditions with limited cooking facilities.

Key Responsibilities


Develop quick-cooking dehydrated foods, instant meal systems, non-vegetarian dehydrated products, beverage and dessert powders, and emergency ration formulations. Apply and optimize dehydration technologies including HTST pneumatic drying, freeze drying, cold-shock dehydration, and intermediate moisture food (IMF) processing. Ensure rapid rehydration, nutritional retention, and sensory quality while scaling products from laboratory to production level. Conduct shelf-life studies under ambient and extreme conditions, develop modular ration components, and validate protective packaging for moisture, oxygen, and light control. Coordinate field trials with armed forces and disaster-relief agencies, evaluate product performance under operational constraints, and incorporate user feedback. Prepare technical documentation, SOPs, and support technology transfer to production units, industry partners, and corporate cooking programs.

Qualifications


M.Tech / PhD in Food Technology, Food Science, Food Engineering, or related disciplines (B.Tech with relevant experience may be considered). Strong knowledge of dehydration and instantization technologies, experience with RTE or military foods, understanding of nutrition for extreme environments, and expertise in sensory evaluation, shelf-life testing, and quality assurance. Ability to work effectively in multidisciplinary R&D and field-oriented environments.
